Cilantro Lime Rice
Some recipes are meant to be the star of the show. Others are meant to quietly make everything around them better. This cilantro lime rice does both.
It starts simple, but transforms into something bright, aromatic, and deeply satisfying with the addition of fresh lime and herbs. The zest brings a subtle citrus perfume, the juice adds that clean, mouthwatering acidity, and the cilantro ties it all together with a fresh, almost grassy note that makes every bite feel lighter.

Ingredients:
1 cup white or jasmine rice
2 cups water
1 tbsp butter
Juice & zest of 1 lime
¼ cup fresh cilantro, finely chopped
Salt, to taste
Directions:
Rinse rice under cold water until water runs clear.
Cook your rice in a rice cooker OR
In a medium saucepan, bring water and salt to a boil. Stir in rice, reduce heat to low, cover, and simmer for 15–18 minutes, until rice is tender and liquid is absorbed.
Remove from heat and let rest, covered, for 5 minutes.
Add butter, lime juice, and lime zest. Fluff with a fork until butter is melted and rice is coated.
Stir in chopped cilantro. Adjust salt to taste.
Use immediately as a base for burritos, bowls, or as a fresh side dish.
